Intel Sells Pentium "Braswell" NUC As Complete Mini-PC
Intel started selling its first "complete" (not barebones) NUC based mini-PC, the NUC5PGYH. Priced at $255 a pop, this unit includes memory and storage besides the Pentium N3700 "Braswell" SoC based system board, the chassis; and comes with Windows 10 pre-installed. 2 GB of RAM and 32 GB of SSD storage is included, you can opt for more of both. There's also a vacant 7 mm thick 2.5-inch SATA drive bay, so you could expand storage. Modern connectivity includes HDMI, USB 3.0, WLAN, gigabit Ethernet, and HD audio.

I hope you can get it barebone without 2GB SO-DIMM stick.
Toslink is not required since it cannot compete with high bitrates bitstreaming can transfer and in some situations if your audio has too high a bitrate it will be too much for Toslink and/or you will have to send it compressed and hope that it will not be too much.
Lack of the DP is also apparent. Sure, VGA is still used today but if someone want to use it then he can buy USB to VGA adapter or DP/HDMI to VGA.
