Well I'm not a fanboy but I've tried both.
For me the deciding factor would be the different combat system so I would pick Genshin if I wanted to put some more serious time into one of them.

Uncertain for me since even if you held a gun at my head I wouldn't be able to tell the difference between 60-75Hz even on the same monitor.
Upgraded from an older 60Hz to my current 75Hz in 2019 and I couldn't notice and once I've had my current monitor default back to 60Hz for whatever reason...
I have no issues playing on a 60/75Hz monitor all day long if I wanted to and I do get immersed in my singleplayer games like Forbidden West currently.

I can't see the diff between 60 and 75 Hz, when I've upgraded to my current 75Hz ultrawide from my 60Hz standard FHD monitor I thought that it will be different but nope I did not notice the difference in any game.
