So, I've got two 15" laptop screens out of a couple of two-in-one laptops, and I wanted to find a controller to manage the touchscreen as well as the display itself. Has anyone had any luck using older touchscreens and repurposing them with touchscreen functionality?

It depends on what you have and where exactly are you trying to use it. With display portion it's easy - there are tons of cheap LVDS and eDP scalers out there, all you need is some cash and chose a proper display cable. But with touch - it may require some fiddling. Some panels are just plain-old USB(but it could run on either 5V or 3.3V), and some work like touchpads, on i2c bus. Some AIOs have it all on separate cables, and some may have a touchscreen signals going through eDP connector itself.
