But why Apple decided to use DDR3 since the 27" model is Skylake-based?

The early generation of DDR4 is going to be about the same speed, if not even slower, as current DDR3 chips, and also much more expensive.

The prices seem pretty normal this time and they use standard SO-DIMM so there is no reason they would price it higher if you can get it in any store:

They want $68 for 2x4GB of RAM. Newegg has multiple kits of the same speed for under $45. Their 4x8GB kit is $70 more expensive then an identical kit from newegg.
