That's a terrible idea.
I have it that way on two out of three PCs.

One, cause tablet made by MS definitely doesnt work correctly without Store, cause someone had such brilliant idea to actually make part of pen/touch virtual keyboard support into app and that app is on Store. Simply put, that Store is requirement there to actually make it work. Took me few days to figure that out. MS is just mental.

Another, cause HDR is a bit happier with Store in Windows, or at least it seemed that way, but honestly HDR in Win 10 is such fucked up thing, that I would gladly murder person responsible for that. Or at least force them to watch their favorite movies in HDR on Win 10, with brightness constantly going up and down.

Anyway, one can install Store with bare minimum stuff and it doesnt really change much in LTSC and it still can be very much telemetry free system, if one is about that.

I think it would be even possible to install it, get whatever is needed from there and then disable/uninstall Store. Since apps as far as I know can be installed even without Store. If I remember correctly there is somewhere on the web even decent know how, one just needs to get packages and stuff they depend on and install it.
