I only have three SP120 RGB Elite fans in the front of the case right now, i want to add 3 more fans. The case allows for configurations like these, how would it work if i used the same configuration in picture 1 but i instead use 3 120mm fans in the front? Would it be better than a full 120mm configuration?
In short: should i get 140mm fans for the top of the case or should i keep it all 120mm?

you already have three 120mm fans so you may as well use them instead of getting 140mm unless you don't like the noise. I assume the CPU is tower air cooled, so just get one more 120mm for the rear and call it a day. You can add a rear roof panel fan but it's not going to make a major difference to temps at that point unless you were running the system full tilt 24/7. You can check out the tests below for more info and why adding a fan to the front roof panel is a bad idea.

The simple rule to keep in mind is that hot air goes up. When building a case:

Front: intake
Back: exhaust
Top: exhaust
Bottom: intake
Side panel (if present) intake
Side (on dual-chamber cases): Depends on the side panel type. Exhaust if the side panel is grille/contains a fan, intake if the side panel is tempered glass or acrylic.

I have one 140mm on front, 2x 120mm on top and one 120mm on rear. A temporary solution, I'll put different configuration when I move back to water.

Given the limited nature of the options for the case, 3 120 up front as intake, 3 120s in the top/back as exhaust. Balance via curves as needed.
