I don't have a SeaSonic PSU, but my EVGA (Super Flower) one has an ECO mode which turns off the fan until a certain power threshold is reached. I'd assume the feature on yours is similar to that.

Personally I leave ECO mode off since my PSU is mounted fan-side down. If you have the fan facing up, you should probably use the feature.

One is the regular mode where the PSU fan spins all the time (IIRC selector switch position popped out), and the other Eco mode where the fan only spins under a heavy PSU load or high ambient temps.

You should always be using Eco to keep wear and tear of the fan plus noise to a minimum, unless you have some really weird cooling configurations like when the PSU fan is your only exhaust.

Hybrid mode only affects fan speed at idle. It's called "hybrid" because it's a middleground between passively-cooled and actively cooled PSU. Everything else is the same.
It depends on your case, PSU position, and case airflow, but in most cases you can run it in quiet mode all the time (fan will kick in automatically when the PSU is getting hot).
I have an SSR-550FX, and I usually run it in normal mode cause it's relatively quiet and insides of my case get relatively warm during gaming.
In your case, an 850W unit in a typical gaming rig is an overkill anyways, so if you have good airflow, you can probably run it in passive mode all the time.

i use eco "fan off mode" with my seasonic gx850w and it only spins up when playing a watt hungy game like when in VR then it only spins off and on, it just dosnt get warm to make it spin all the time. my spec is 2700x @4.2 1080 @2100.
