Some GPU Upgrade Questions

I'll mention here that despite building this pc as a workstation in 2017, I have no real idea what I am doing. That is why I am here.

My current rig:
Motherboard - Asus Rog Maximus X hero (WIFI AC)
CPU - Intel i7-8700K (factory 3.7 GHz)
GPU - Nvidia Quadro P4000, 8 GB (roughly 1660 equivalent)
RAM - Gigastone Black RGB Game Pro Desktop RAM 32GB (2x16) DDR4-3200MHz.
PSU - EVGA SuperNova GOLD 80+ 1000 watt.
Storage - three 2TB hard drives and a 500GB solid-state for a boot drive.

The motherboard is equipped with a 1x16 pin connector which I believe can power anything I throw in it. I want to install a Radeon rx6800 graphics card. Is this a poor pairing? Should I look for a different card? I was also considering an RTX 3070, but I cannot locate an available card locally.

I get the CPU is very old, but from what I can tell it holds up alright. I've read I can overclock the 8700K fairly easily to or close to 5 GHz, though I don't actually know if that'll help. I play all my games at 1920x1080p, 60fps.

Workstation or gaming?

For a workstation it's best to stick with NVIDIA, for gaming AMD can be cheaper for similar FPS, but you lose out on RT, DLSS/DLAA, efficiency and productivity software.

You can use a computer for more than one thing. OP states he built the system as a workstation.

The original intent for the pc was a workstation but that flip-flopped and now I just run it for games. I do run blender very* occasionally but nothing extensive. Thanks for your replies.
