I mean, it’s not like there are many viable options in the “more than 16 Gigs” category. It’s basically two for 24 and a single one for 32. Yeah, there is the 7900XT for 20, but that card was a bad value from the start and time didn’t make it better. The question is simple - if this is something that worries you, are you ready to put down cash for a 4090/5090 and, if not, can you find a 7900XTX for a reasonable price if willing to go AMD?
That is disregarding the fact that 16 Gigs is still fine, except for some real edge-cases. MSFS is just a horribly optimized game, for instance. Mostly everything else should play fine?

Short term perspective vs long term perspective.

It matters a lot how much do you want to spend and how long do you intend to keep the graphic card. It also depends on the chip brand. You are locked in anyway by nvidia or amd feature set and the asking price for the hardware.

Intel are just for basic rendering tasks - not worth considering in next 5 years

16 GB is plenty enough for 4K at the moment. As neural textures start to be deployed, games will become even more VRAM efficient, which will ensure that 16 GB continues to be viable into the future. Games that don't run well on 16 GB are an outlier and usually suffer from technical issues. No games require 20+ for a great experience right now.
