Exactly this. I've been using this option since I first introduced it and never had issues.I am assuming no though otherwise people would have complained about it by now.

Without the option EAC will just not start the games, which I'd assume is the expected behavior, instead of just banning people, which is definitely a false-positive

The "bypass" doesn't touch EAC or what it does. It just rebuilds the signature in a specific way, so that EAC's buggy implementation of the driver check is happybut since were bypassing, cant eac detect it as a malicious attempt?
