For me the one with the most fond memories was Stunts 4D Sports driving (PC).
This one even had a map editor for making custom tracks. If you managed to hit the top of a bridge head on at full speed the game physics would glitch and send the car straight into the air.
But also who could forget Super Mario Cart (SNES) or RC Pro AM (NES)
