I put a PSU in a bucket of distilled water and it no longer works

Would not any dirt and residue in the power supply make the distilled water electrically conductive?
You can measure a lot of different Voltages on several of those metal pins inside a power supply unit. It is not insulated or rated to be IPXX proof.

Who in their right mind? Are you serious? You do realize distilled water is still loaded with impurities and that any impurities inside the device will form a very conductive electrolyte.
You don't put water anywhere near high voltage electronics. My gosh!

Are you sure you used distilled water? There's also de-mineralized water and also de-ionized water. There's difference in process how those water types are created.
Sometimes it is messy. Sometimes shop sells de-ionized water as distilled. De-ionized may contain micro organisms, bacteria, etc which can cause problems.

that wouldn't matter, the second you put something in which is unclean (dust or minerals for an example) it becomes conductive again

Where does distilled water come from? We mere humans make it and last I checked, none of us walk on water. Therefore, it is critical to understand achieving 100% pure distilled water is nearly impossible.
Then, how do you get the distilled water home? In a plastic bottle made by us mere humans again. A plastic bottle that for sure, is not 100% pure, nor was there an absolute vacuum in the bottle before it was filled.
And then what? Water absorbs carbon dioxide from the air around us which causes it to ionize slightly becoming slightly conductivity. True, it is much more resistive than tap water, but then we are not talking about low voltage potentials either. We are dealing with deadly 115/240VAC voltages.
