Thanks alot for the reply's. I was hoping to keep the 1080ti, for a while longer. So I could get a better GPU later down the line.
Would that change anything in your recommendations.

Best regards,
Something newer should be much more upgradeable without breaking the bank. Like 14600K(F) or 7600(x) or 7700(x) and you won’t have to overpay for 7800x3d or 9800x3d.

The 9600 or 7700 seems like a well priced entry level. Would a b650E or 870x be to much as a mainboard? My experiences are mainly Gigabyte and the odd Asus.
Asrock seems to be well liked currently. Any recommendations as a mainboard?

For pure gaming I'd definitely get the 7600 instead of anything other than the 7/9800x3d. There is very little difference between the 7600, 7700 or even the 7800 for games. IF you play CPU bound games a lot (simulation, grand strategy, that kind of thing) Zen 5 is interesting, like the 9600x. But again, for pure gaming I really don't get why people recommend the 7700, unless it's really close in price (where I live it's like a €50 difference at least, not worth it unless you actually use the cores).
Yeah I would burn some cash on a 1440p144 display. That alone will improve your experience a lot. And it's not even that expensive.

The games don't get better though, just harder to run.

Here are a couple ideas to consider (so many options). I picked Germany on PCPartPicker because you listed a budget in Euros.

Option 1. 7700X build. Notes: The 7700 is only about 7 euros cheaper in this region. not sure why, but for 7 euros difference, I'd get the 7700X.
PCPartPicker Part List

CPU: AMD Ryzen 7 7700X 4.5 GHz 8-Core Processor (€294.89 @ Amazon Deutschland)
CPU Cooler: Thermalright Peerless Assassin 120 White 66.17 CFM CPU Cooler
Motherboard: ASRock B650 Steel Legend WiFi ATX AM5 Motherboard (€220.99 @ Amazon Deutschland)
Memory: TEAMGROUP T-Create Expert 32 GB (2 x 16 GB) DDR5-6000 CL30 Memory (€114.34 @ Galaxus)
Case: Fractal Design North XL ATX Full Tower Case (€169.90 @ Amazon Deutschland)
Power Supply: Corsair RM1000x (2024) 1000 W Fully Modular ATX Power Supply (€174.89 @ Alternate)
Total: €975.01
Prices include shipping, taxes, and discounts when available

Option 2. A more "light-workstation"-oriented build with Intel 245k. Notes on this: they just launched the B860 series motherboards, so you might be able to get like a steel legend board or something for cheaper than the Z890, but the prices aren't available yet. This is not the best gaming platform out there and we only have rumors that they may support one more generation of CPU on this chipset, but for many workloads other than gaming, these perform well while still being "ok" for gaming. You mentioned SSE instructions holding you back, and I wasn't sure if there was some kind of workload you use a lot so I figured I'd price this out and it came really close to the 7700X build. If the B860 boards are cheaper, they may end up costing about the same.
PCPartPicker Part List

CPU: Intel Core Ultra 5 245KF 4.2 GHz 14-Core Processor (€279.00 @ Amazon Deutschland)
CPU Cooler: Thermalright Peerless Assassin 120 White 66.17 CFM CPU Cooler
Motherboard: ASRock Z890 Pro RS WiFi White ATX LGA1851 Motherboard (€245.09 @ Proshop)
Memory: TEAMGROUP T-Create Expert 32 GB (2 x 16 GB) DDR5-6000 CL30 Memory (€114.34 @ Galaxus)

The other parts for both of these, I left with what you had already selected. I picked a reasonable RAM kit that matches the theme (based on your case selection) and has good timings. Going faster than that shows minimal improvement with Ryzen usually (if it works at all in some cases) and I'm not sure about cost/perf. with Intel either past that.
For the Power Supply: you could save some money on a be quiet! Pure Power 12 M 850W that'd be fine for your build with some room to grow as well. The 1000W is between the two. The Straight Power 12 850W is also cheaper than that Corsair and it's Platinum rated.

ASRock motherboards have been doing pretty well lately. I would still stay away from the super cheap models (You can usually tell when the VRM's have barely any heatsinks and the power phases are like ~10 or less). The Riptide, Steel Legend, and Phantom Gaming Nova are usually their best bang/buck options that come with all the important features, but aren't the most expensive models. The Taichi series is great, but still pricey.

7600 non X (X only if it costs less for whatever reason)
32gb Corsair Vengeance 6000mt

it's pretty much the "standard" AM5 build
+good cpu cooler (like thermalright phantom spirit)

it's what I own. No reason really to get a better cpu. You'll get one when the need arise.

plus for the future you really need to think and put money aside for a new monitor.

BTW I also updated 3months ago from a Phenom II X4 955!

I'm amazed that you were able to use a 1080 Ti with a Phenom II. I had a X4 955 powering a 290X for a while and there were some games where the CPU kept the GPU twiddling its thumbs. I think the builds recommended by @Steevo and @JustBenching in posts 2 and 3 respectively are the most frugal options. If you wish, you can stretch to AM5. I've followed post # 28 in picking German prices.

I noticed after I posted my previous suggestion that there were more 6-core suggestions. That seems totally fine for your gaming usage. I had opted for a bit more with my assumption of some non-gaming workloads (which maybe isn't a good assumption?). I also tried to stay with your case, which is white, which led me to pick a bunch of white parts to go into it, that happen to be a little pricier per item. You can definitely save some money at each step like @AnotherReader posted above. Those are good parts and a good build for the price.

You can literally build a full system including monitor and GPU for your budget including a massive step up in GPU performance, not sure why you want to hold off with the 1080ti, it was a great card for it's day for sure and still good for 1080p gaming but why spend so much on a platform and stay with 1080p/60 when you can literally step up t 1440p 165hz+ and a GPU within your budget?

I think with 9070/9060 out within the next couple months (maybe end of January even), the prices of AMD 7000 series might come down and you may even be able to get a 9060XT or something that performs better than a 7800XT (we don't know where exactly those are landing yet) for less money. So right before launch is usually a good time to wait and see where things end up. Pretty much any other time, you should just buy when you have the money and the availability is there.

Software A lot.
Benchmark Scores Its fast. Enough.
5800X3D $210 5% less performance than 7700X $329 at 1080 with a 4090 so it’s only the CPU and that’s aggregated.

Mobo prices are pretty equal

RAM prices are $50 cheaper for Ddr4 vs 5 for 32GB.

$170 more to spend or save for a better GPU later.

Or 7600X or 7700X on AM5. Ability to upgrade further in the future.

Currently using a Gigabyte 890FXA - UD5 the revision 1.1 as I recall. it doesn't support AM3+. Unlike the later revisions.
I have that same mobo in its box on my shelf. And you knew where i was going with that question.

then the 1080Ti will become 1050Ti, MAGIC :D :D :D
Didn't you know that higher refresh rate isn't only meant for gaming? Overall UX will improve. Browsing, typing, work, everything will become much smoother. The fact 1080 Ti will struggle to get to 144 FPS in heavy games doesn't mean anything. Every GPU struggles at some point of its life. Also there's not really more than three dozen games that require much tuning for 1440p144 to be possible on 1080 Ti. It's not that bad.

But again, for pure gaming I really don't get why people recommend the 7700
I noticed the OP doesn't upgrade often. Thanks to having more cores, 7700 will stay on top of the things for a longer time. That happened to the 8700K/9900K pair, will happen to 7600/7700. Sure, the difference isn't huge but it does exist. And it matters for those who don't like buying new systems every couple years.

Small update guys.

I made a combination between a few of the above mentioned suggestions.

CPU: AMD Ryzen 5 7700 (€235) was able to get a decent deal on it.
CPU Cooler: Thermalright Peerless Assassin 120 SE
Motherboard: ASRock B650 Steel Legend WiFi ATX AM5 Motherboard
Memory: Corsair GB (2 x 16 GB) DDR5-6000 CL30
Case: Fractal Design Pop Air XL
Power Supply: Corsair RMX 850 (2024)
SSD: 2TB Kingston renegade.

I want to thank you all for the help and suggestions. The 1080ti is still chugging along a little while longer.

Looks like a solid combo for good 1080p and some light 1440p with that 1080Ti, especially if you don't dabble with recent releases.
When the time comes for a GPU upgrade, though, you'll have a very competent backbone.
