I bet you installed new updates on back to back boots, and it just seems like MS is really trying to ram it down your throat. I wish they'd stop too, but it what it is. I love that everything time I use a MS website, it adds a webpage section at the top of the page that claims Edge is more secure and that I should switch.
I ran Edge for about a year when it first came out publicly. It is the best browser that MS has ever made, IMO. I use Chrome, Firefox and Edge regularly, but my go to is still Firefox.
