OP tends to be a guy who upgrades once a decade. It's by NO mean an overkill. By early 2030s, everything he has will be obsolete and borderline useless. Exactly like his current build.
I'd go for AM5 and manually configure everything in BIOS and test thoroughly to be sure every single current, voltage, and wattage is sane. 7700X is great for gaming, 7800X3D is even greater for it, albeit with a bit worse productivity in tasks which are not cache intensive. So if you consider gaming performance matter more than overall performance, go for 7800X3D. 7700X otherwise.
6800 XT is more than good for 1080p but will run short on juice in 1440p in a matter of years so I'd recommend considering 7900 XT which is a true ultimate 1440p gamer.
