Yeah that does suck. I love XFCE for the reasons you just stated. I also like the interface better. It just "feels" better to me. However, we're meandering from topic a bit, so I digress.

An old setup inside a VM (Xubuntu/XFCE) with a simple theme (Dracula iirc).

I have since moved to a mostly stock Ubuntu (Gnome) system.

Good old customizability. Reminds me of when I used OpenSUSE KDE (KDE 4.xx at the time), so heavily customized that made some classmates of mine (when I was still studying computer engineering) be awed and asking me what sorcery that was. Every Linux I used since then (until Garuda) I used as vanilla as possible (and MATE is great as that, as simple as can be), because that OpenSUSE got me a little tired hahaha

This was what the latest versions of GNOME 2 looked like.

I would say that MATE is functionally an exact copy of GNOME 2.
However, GNOME 2 did have the advantage that you could use emerald themes, which sometimes had quite spectacular looks.

Tried it on a Lenovo x140e netbook and it was very laggy... what's the specs on that system you got it on??

Intel 12600KF -- Kingston dual-channel CL40 @6000 -- GTX 650 1GB -- EVO 850 500GB

The experience is very snappy on this hardware, especially for file browsing.
For loading folders that contain hundreds of other folders or files on ZFS drives, I don't notice any difference in experience with XFS or F2FS.

GhostBSD and FreeBSD are rich in software. In terms of desktop environments and window managers, you have 90% of the capabilities of Ubuntu, Fedora and Arch Linux.

GhostBSD and FreeBSD have more capabilities in this area than e.g. Alpine Linux and Clear Linux. This may still make sense since Alpine and Clear do not focus on desktop.
But GhostBSD and FreeBSD also have bspwm and PeKWM, although mageia, a desktop Linux system, does not have these window managers.

Although Ubuntu is the most popular system for the cloud, there are many popular and important packages that are easier to install on FreeBSD than on Ubuntu. For example, Nextcloud used to be fairly cumbersome to run on Ubuntu. Whereas installing Nextcloud on TrueNAS and FreeBSD is child's play.
