I mean if I had to recommend to someone Gundam and they were interested in starting with the Universal century timeline then at minimum the original show, be it you watch the 3 OVA to speed run or the original show. Then Zeta gundam(again 3 part OVA or show) and then Chars counterattack.Wow no to watch Gundam Wing? I agree with Zeta Gundam though.
Enjoy them then dive into the rest.
Other shows in my opinion like Wing, G, X, Seed etc you can jump in at any point as they are standalone and a good gate way into the franchise, but the best gateway show to get into Gundam "lore" is definitely Build fighters and Build fighters try.
If people enjoy Seed then they should in theory like the original show+Zeta, since Seed&Seed Destiny plot was inspired by the original&Zeta.
