Out of the box they should be set to Medium. There is no indication other than min/max speed reported showing what setting they are currently in. I just sat in BIOS and set each fan individually to max speed to check how close to claimed figures they hit and power draw. If in doubt stand direct line of sight to front of fan and press desired speed a few times.
Have you seen the revision with reversible fan blades that are remote programmable? This is where memory comes into place. If you only want a couple fans running backwards you can power only them up and set both speed and rotation or just speed for each individual fan before final install. 50rpm difference on bottom and a PWM fan curve alleviate much outside of power use at Low. TPU briefly touched on this and a HF 120 version.

I really like them as well. Performance accessed on low end of speeds is the downside I'd pick compared to quad Noctua (3x NF-F12 + 150mm Chromax) these replaced. For modern processors there is just so much air movement on tap for when temps instantly spike that I'm willing to endure a slightly higher noise floor at idle. Even there smooth equates with above average design that is especially noticeable over the VRM with a tower cooler.
Debating between stock 80 CFM fan on back of cpu cooler, a second Megacool, or leaving well enough alone. Solid block of fan-heatsink-fan-exhaust fan with almost no gap is hardly something I want to emulate. Afraid I'd lose air movement over PWM and board components for not much better cpu cooling.
