I thoroughly enjoyed setting up ASRock's DeskMini 110. The SO-DIMM slots are easily used, even with their close proximity to the CPU cooler. Drives are also added easily to the bottom of the board's tray, with a nice little cutout with folded edges to ensure the provided cabling you'll use to plug the drives in doesn't chafe and fray.
One of the most exciting parts was being able to use my Samsung 950 PRO M.2 drive with ASRock's DeskMini 110. Not many small PCs offer support for such a high-end drive (although some others do), so it was a treat to see that ASRock added nearly everything you'd need for a tiny PC with extremely decent performance.
